They have no taste, just a slight creak; many people prefer them to be a little softer and soak in hot water before use. Asian markets and health food stores have sea beans, or, if you live by the sea, you can find your own! While rainbow carrots for a beautiful demonstration and package healthy anthocyanins (antioxidants give purple and red colors), plain orange carrots will work perfectly if rainbow is not available. (note that sea beans are very salty, so there is no need for salt products in noodles.) It can be served with mustard kelp noodles and sea beans.

If fresh crab is beyond your budget, choose canned variety instead of artificial crab; this kind of thing contains crazy ingredients from corn syrup to artificial flavor.
